This is a “Summer Pineapple cake” at least that’s what I’m calling it! I love pineapple cake but for me it’s just to heavy to eat when it’s hot. I had a class presentation and thought I would make a cake to bring in. Undecided on what to make, I had to make something I loved. I didn’t want to make something everyone is use to, simple but different and light . So, I decided on pineapple and change it up a bit to make it a little lighter then your usual pineapple cake.
This cake is a 3layer yellow cake . Each layer soaked in a pineapple syrup and left over night. Then frosted in a light and fluffy vanilla whip cream frosting.
