Mini and Mikey club house cupcakes, use airbrushed and candy sprinkles. cakes are Yellow and chocolate. I usually buy the frosting instead of making it, but my friend child had a peanut allergy, so I had to make it home-made. I really don’t like making frosting from scratch, especially the Wilton one. What a mess and time it takes. Although I don’t like making frosting this one I didn’t mind, it was easy to make, light, not so sweet and really good.
2 Cups shortening
1/2 cup powdered creamer
1 teaspoon almond extract
1 package confection sugar
1/2 to 3/4 cup water
1) In a large mixing bowl, beat the shortening, creamer and extract until smooth, gradually beat in sugar. Add enough water untill frosting reaches desired consistency.
2) Store in refrigerator for up to 3months. Bring to room temp before spreading.
