What’s up everyone!! Hope everyone had a great week. Even tho this weekend is filled with nasty weather, make the best of it!! I think I will consider going out with ”the girls” this weekend. I have a couple of projects coming up can’t wait to post it!!! This  week has been filled with dramatic events (said with british accent), that I won”t even discuss (lol). You live, learn and keep it moving . My daughter Jade, who I often  talk about in some of my post. She is my Mini-me chef and an Artist , who is 6 and doing so well in school with everything and enjoy’s a good book.  I’m glad she enjoy’s her books just much or more than her T.V. shows (lol). She loves going to the school library and brings home a new book every week. This week we read “Fox and Socks” by Dr. Seuss, she was laughing so hard on all the tongue twisters in that book. All I can say is I enjoy moments like that. My soon to be two-year old going on 40 , Shila , we share a birthday(oh the memories of my birthday gift  lol ). Who is to smart for her own good, and my little soon to be musician.  My two lovely Princesses, they are  my best critics when it comes to pastries :-) . When I told Jade I was making this pie she said “yuck yogurt in the pie, u going to put in a pie?” I said “Yes” (lol).  “Ewww” she says . After making the pie and letting it set in the refrigerator overnight , the next day served it to the kids. It’s almost like being in contest waiting for the judges to give you an answer , kids loved it and wanted seconds. The kids  love yogurt, the fact it’s in a pie makes them think it would be nasty(lol). I have also had a new addition to my family, My cat his name is Lasso and he is 9 months . I will also talk about him more, he has been doing some strange and funny things since we got him. We never had a pet before and kids love him. 

This pie was inspired by Food And Wine Mag. online in the dessert section and Cooks Who Care Edition – Taste of Home Cook book . The difference is there dessert is baked and has apricots , the other is made with lemon. Most of what I will  make for  some upcoming post will derive  from these recipe mags. Yogurt pie is a no-bake pie , with graham cracker crust . Made with whipped cream, yogurt  and gelatin .When I first made it , I didn’t use the gelatin and was going to post as frozen yogurt pie . It just wouldn’t hold up  that long for the pictures(lol) , so second time around was a keeper.  Its delicious and easy to make.  Thanks for viewing, reading my post and all the support ,enjoy the recipe .

Peach Yogurt Cream Pie

 1 Envelope unflavored  gelatin

1/4 cup Cold water

1/3 cup Sugar

1/3 cup milk

3 cartons of Greek  Peach Yogurt

1 carton of frozen reduced-fat  whipped topping, thawed

1 Graham cracker crust

Peach preserves for topping after pie has set

1. In a microwave-safe bowl, sprinkle gelatin over cold water, let stand for one minute. Microwave, uncovered on high for 20 seconds. Stir in sugar and milk. Add yogurt; mix well. Fold in whipped topping; spoon into crust.

2. Cover and refrigerate for 8 hours or overnight. Once set: spread peach preserves on top and enjoy.
